One of the most unique teas in our collection, this Northern Taiwanese oolong is the product of a process created in Japan's National Institute for Tea Experimentation in the late 1980's. Through the use of the modern culinary technique sous-vide, an anaerobic reaction creates the natural stress reducing amino acid GABA. This leaves you with a perfectly balanced cup engineered for energy and focus.

Chaga is a mushroom that grows predominantly on birch trees in Russia, Siberia, Northeastern Europe, the Northern United States and Canada. Chaga may help to improve cholesterol, lower blood sugar and boost the immune system. It also has the highest ranking antioxidant potency of any superfood! It has a naturally sweet earthiness to it with notes of caramel, dark berries, vanilla and cocoa. Our chaga is foraged locally from the Southern Adirondacks.
Chaga is best brewed hot over a long period of time to fully enjoy its health benefits!
How to brew Chaga:
Option 1: Steep 2 tsp of ground chaga in 8oz of water just off boil for 10 minutes. Strain and enjoy!
Option 2: Measure out 1 tsp of tea per 8 oz and multiply that by your desired batch size. Bring a saucepan to a simmer with the chaga and cook for 2-4 hours at a low roll. Strain and serve hot or chill for cold!
Use your brewed chaga in your compost or as mulch!

The traditional powdered ceremonial Japanese green tea, matcha has recently gained popularity in the west as a "super-food". As opposed to other teas where an infusion of the leaf is drunk, with matcha, the whole leaf is consumed. This, of course, means more antioxidants and more caffeine. Our Matcha Wako is enjoyed in thin tea preparation and is the second highest of the ceremonial grades (usucha, thin grade). It arrives vibrantly green and freshly sealed in airtight 20 gram tins which yield 12-14 servings.
Our matcha is freshly ground for us in Japan right before it's shipped from our award-winning producer, Marukyu-Koyamaen. Incredibly, Marukyu-Koyamaen began producing tea during the Genroku period (1688-1704) in Ogura, Uji. Part of the venerable tradition of Japanese green tea production (Ujuicha), over the ensuing centuries the quality of their tea has only increased. Still family-owned, their high standards are consistent from cultivation to the final product, forming the bedrock for their highly regarded reputation as one of the foremost producers of fine teas in Japan.

Our producer, Marukyu-Koyamaen, first began production of tea in the Genroku period (1688–1704) in Ogura, Uji. Through subsequent generations, the quality of the tea increased, thus establishing the venerable tradition of Ujicha; by the eighth generation, the market had been extended to all of Japan. A standard of high quality, consistent from cultivation to the final product, was achieved, and the company — still family-owned — remains highly esteemed. Marukyu-Koyamaen now ranks among the foremost producers of matcha in Japan, and has won many national prizes.
This superior grade can be used for thin or thick style matcha; for thin, use ~2g matcha and 1/3 cup hot water (190°F) per serving, and whisk vigorously with a chasen for about 20 seconds. Experiment with the amount of water to find your favorite formula.
