3/4 cup honey (we recommend a dark honey like Italian Chestnut or Buckwheat for the depth of flavor they add to the recipe)
1/3 cup soy sauce
4 Tbsp rice vinegar (or white vinegar)
6 cloves garlic, minced
1 Tbsp ginger paste (or minced fresh ginger)
1/2 cup water
2 Tbsp cornstarch
1. Combine honey, soy sauce, vinegar, garlic, and ginger in a sauce pot and bring to a simmer
2. Meanwhile, mix cornstarch into cold water
3. Once the honey and soy sauce mixture has simmered for 5-10 minutes, add the cornstarch slurry and bring back to a simmer, stirring constantly until thickened
4. Cool the sauce and store in the fridge for up to 2 weeks
