Whenever we have a breakfast meeting (we have a lot of breakfast meetings - morning is a great time to drink tea, after all!), our whole staff waits with baited breath to see if Hayley will bring her homemade granola to share. We've finally convinced her to share the recipe, and it's so simple you'll be mad you haven't been making this easy honey granola from scratch all along!
4 c oats
1/2c coconut oil
1/2c honey (we recommend Buckwheat Honey)
1t vanilla extract
1t salt
4 egg whites (optional, for additional protein; you can make this granola for your cupboard while making our Honeycomb Ice Cream, which takes 4 yolks!)
Cinnamon to taste
Mix In Ideas: Coconut Flakes, Walnuts or Pecans, Pumpkin Seeds, Flax Seeds, Chia Seeds, Dried Fruit, etc.
Mix all dry ingredients together in a large bowl. Warm coconut oil, vanilla, honey, and salt in a small pot and pour over dry ingredients. Add egg whites if using. Mix well - the dry ingredients should be coated. Bake at 350 for 20-25 min. Turn half way through, and press down with spatula to create clumps when it cools. Remove when golden. Let cool.
