Honey is a wonderful product of nature that requires no processing and still has an infinite shelf life. Each of our 100% raw honeys are unique to their origin and, like wine, have a terroir that is reflective of the environment where the bees work.  Because of this, honey can taste and appear different year to year and these are the changes we celebrate!

Monofloral Honey

Monofloral honey is a fancy way of saying the honey was made by bees pollinating only one type of plant. We love the intriguing tang and sweetness of our raw monofloral honeys and how different they are not only from each other, but also from other monofloral honeys of the same varietal produced in a different country or region. You may notice one honey on this page that isn’t monofloral, however: our local New York Wildflower honey, produced by busy local bees who just love the fields of wildflowers in Upstate NY!

Infused Honey

Not to be confused with, say, our Cranberry Blossom Honey, which is a monofloral honey made by bees pollinating cranberry bogs, our infused honeys are raw honeys that have been scented with flavors like mango, peach, and even ghost pepper chili! We love these infused honeys for a special gift, paired with cheese, or in teas (like the local favorite Mango Matcha).
