Honeyed Orange Poppyseed Cake

We love finding ways to use our more savory honeys, such as our Italian Alps Honey, in sweet treats! This earthy honey perfectly lends itself to the citrus and poppyseed flavors resonating throughout the cake. We recommend using our Italian Alps Honey, but our Orange Blossom Honey would also be a good choice to add to this orange poppyseed cake!
1 cup flour
1/2 cup sugar
2 tbsp poppyseeds
1 tsp baking powder
Pinch of salt
Zest of 1 orange
Juice of half an orange
1/2 cup Italian Alps Honey
1/2 cup olive oil (or melted butter, but we highly recommend olive oil!)
2 eggs
1/2 cup plain unsweetened yogurt or sour cream
1 tsp vanilla extract
1. Preheat the oven to 350°F and grease a loaf pan or cake pan, then flour to prevent sticking.
2. Combine flour (sifted!), sugar, baking powder, salt, poppyseeds, and orange zest into a big bowl.
3. In a separate smaller bowl, mix oil, honey, eggs, yogurt, vanilla, and orange juice until smooth.
4. Pour the small bowl of wet ingredients into the large bowl of dry ingredients and stir gently until just combined. Be careful not to overmix.
5. Pour batter into pan, bake ~35–40 min (stick a toothpick in — if it comes out clean, the cake is done).
6. Let cool, then drizzle extra honey on top while it’s still warm so it soaks in, or keep reading for an easy glaze recipe!
1 cup powdered sugar (sifted)
1-2 Tbsp water or milk
1/4 tsp vanilla extract
Whisk all of the ingredients together, start with less water/milk and add more until you reach a thick, runny glaze. Pour over cake while still warm and enjoy! If you feel like dressing up the cake further, try garnishing it with thin orange slices to really elevate the presentation of the cake for a special occasion.
