Black Forest Honey, also known as Honeydew Honey, is unique because instead of consuming nectar, the bees consume honeydew, a sweet substance created as aphids process tree sap. The wonderful health benefits of this 12oz jar of honey parallel those found in Manuka honey. A dark honey with a high mineral and antioxidant content and a light molasses taste, this honey is highly prized in Europe.
Drizzle Black Forest honeydew honey over baked eggplant fries for a sweet and savory appetizer! Or, if you prefer to add honey to your tea, we recommend trying it as an interesting pairing with shou pu er 2008 Jingmai, Feng Huang Hong Cha, and honeyed oolongs such as Lao Cong.
Natural raw honey has the seemingly magical capability of spontaneously "setting" or crystallizing. Each honey will crystallize at a different rate based on the sugar and water composition. With its wonderful texture and more concentrated flavor, we recommend crystallized honey as a delicious spread over toast! If liquid honey suits you better, simply heat a warm water bath to 100 degrees and remove the pan from the heat. Submerge your jar with the cap removed and allow to stand 20-30 minutes. It will be ready to pour again! An uncertain amount of time will pass before the honey may need de-crystallization again, and then simply repeat these steps as needed.
